Serve this dish over orzo, creamy goodness.
Sprinkle chicken with salt and pepper. In large skillet, heat 2 tbs butter over medium heat. Add chicken, in batches, and cook 4 minutes per side, until browned. Remove and keep warm.
Melt remaining butter in skillet over medium heat. Add shallot, and cook for 2 minutes, stirring frequently. Add vinegar, cook 1 minute. Add cream, mustard, tarragon, and sprinkle salt. Stir to combine. Return chicken to skillet. Bring mixture to a boil; reduce heat, and simmer 5 minutes until thickened.
Serve with prepared orzo.
