Savory breakfast bites, reminiscent of a Quiche Lorraine. Best served hot out of the oven.
Preheat oven to 350. Mix all ingredients except chips together in bowl. Spoon filling into chips, about 2 T per chip. Be sure not to overfill, as the mixture will melt and puff up. You don't want it sticking out over the top of the chip! Bake for 20-30 minutes or until golden brown on top.
The most time-consuming part of this is spooning the thick mixture into the chips. I usually fill a ziploc bag with the mixture, cut off a corner and "pipe" in the filling. Also, I usually make the mixture the night before so that in the morning I simply have to fill and bake!
