| 2 1/2 cupsOnion; chopped |
| 1/4 cupParsley; chopped |
| 4 clovesGarlic; minced |
| 1 teaspoonSugar |
| 2 cupsPlum tomatoes; chopped |
| 1 cupDry white wine; or chicken broth |
| 1 1/2 poundsShrimp; peeled |
| 1 cupFeta cheese; crumbled |
| 8 ouncesAngel hair pasta; cooked |
Greek Shrimp with Feta Cheese Preparation
Preheat oven to 425. Warm the oil in a large skillet over medium heat. Add the onions and saute until light golden brown - approximately 7 minutes.
Add the parsley, garlic and sugar and stir to mix. Add the tomatoes and wine to the skillet and cook until they are softened and their liquid is absorbed, about 20 minutes. Add the shrimp and cook, stirring constantly for 30 seconds.
Remove from heat.
Mix the pasta and shrimp sauce into a 2 quart casserole. Top with Feta cheese. Bake until the cheese starts to brown, about 5 minutes.

I made edits to this recipe. A nice pleasant meal my wife and I both enjoyed.
