1. Heat oil in medium saucepan. Stir in chopped onion and cook 3 minutes. Add rice and saute an additional minute.
2. Add pineapple, juice, water, and salt. Bring to a boil.
3. Cover and reduce to low. Simmer 20 minutes or until liquid is absorbed and rice is tender. Fluff with fork and stir in cilantro.
