The beef could easily be adapted to a quesadilla as well
Finely cop chipotles and add all but 1 tablespoons in a bowl with the beef and pickle juice. Allow to marinade for 10 minutes or so..
Grate the zest from one lime into the yoghurt. Cut the limes into wedges, squeeze one wedge into the yoghurt and stir to mix.
In a wok heat the oil and stir fry for two to three minutes, add beef mix and stir fry until cooked to taste
Assemble any which way you like!
