Is there any more delicious combination of flavors than potatoes, bacon, and cheese? Not in my book! Then, give it a flavor of ranch dressing and it's a real winner!
Think of a great loaded baked potato flavor with the extra zing of ranch dressing and then roasted potatoes that are slightly crispy as opposed to fluffy and baked. These potatoes make a great side dish with most anything, and just perfect for a barbeque or pot luck dinner. Try it; your family and friends will thank you!
Preheat oven to 350 degrees.
Wash potatoes and cut into chunks.
Combine in large bowl: ranch dressing, dill, cheese and bacon. Add potatoes. Sprinkle in salt and pepper. Toss to coat potatoes.
Grease a 9 x 13" baking dish with olive oil or cooking spray. Spoon in the potatoes and cover with foil.
Bake for 60 minutes. Stir gently halfway through to get bottom potatoes rotated to top so they don't get burnt and to ensure even cooking & browning.
Remove foil. Raise oven temperature to 400F. Gently stir again, if necessary.
Bake for additional 15 minutes, then sprinkle on a little more cheese, if desired. Bake a few more minutes or until everything is melty, browned and bubbly on top.
Serve with scallions sprinkled on top for garnish. A dollop of sour cream atop each portion is wonderful, or a little extra ranch dressing to dip in.
This recipe is meant to please, DO feel free to tweak to your heart's content and make it your own!
Use a ranch dressing that's flavored with chipotle; or use other kinds of creamy dressings. I also love changing up the spices and using garlic or other herbs in addition to or in place of the dried dill weed to make a better pairing with what I've made as the entree, I've even added eggs or chicken to the dish to make it a more complete meal for brunch. The sky's the limit; enjoy!
