Good 'ol potato salad. This tastes like it has mustard but doesn't so don't skip it. With the vinegar & sweet relish you won't notice anything but how good it tastes! This was my husbands grandmothers recipe.
Boil potatoes with skins on in salted water, approximately 20 min in medium high heat until done through but not too soft. Put in bowl and store in refrigerator while preparing the rest of ingredients, do not cover. In small mixing bowl combine eggs, both kinds of onion, celery, pimento (optional), and sweet pickle relish. To that bowl add mayonnaise & sour cream then add salt & pepper. Mix together and set in refrigerator. Cut potatoes into bite size pieces then remove the skins, they should just slide off. Combine the potatoes with vinegar then mix with hands to avoid breaking potatoes. Combine potatoes with mayo/sour cream mix. Stir until just mixed. Add red pepper for spice or serve on table.
It's hard to tell when a potato is done. Poke it with a spoon, if the spoon cuts in then the potato done. If your celery is really big cut down the center of each stalk until size is right before chopping.
