INSTRUCTIONS
1) Cook potatoes in the microwave.
2) Melt butter in a sauce pan over medium heat. Add onion and garlic; cook for 1-2 minutes. Stir in flour. Gradually stir in broth and milk.
3) Scoop out potato from one cooked potato. Mash pulp and add to broth. Cook over medium heat, stirring occasionally, until mixture just comes to a boil.
4) Season with salt and pepper to taste.
5) Dice remaining potato with skin and add to soup. Heat through. Spoon into bowls and top with desired toppings.
6) Enjoy!
