Spagetti with baby clams in a white beer sauce. Best and quickest pasta dish ever!
In very large pot, boil 3/4 pot of water (salted and with 1/4 teaspoon of garlic). When water is boiling, add spagetti. At same time, in a frying pan over medium high heat, melt butter and olive oil. As soon as butter melted, add 1 teaspoon of minced garlic.. brown but watch very carefully as it burns very easily. As soon as it browns, add juice from both cans of clams and 1/3 of the bottle of beer and the parsley. Drink the rest while cooking. (The chef deserves a treat now and then). Reduce the heat to a slow simmer. Keep trying the spagetti... it should be "Al dente" (just barely firm). As soon as it is ready, put the clams in with the sauce and stir around to cover them in sauce. Quickly drain the pasta, bring the sauce off the heat and serve. (don't over cook the clams or they will turn into rubber. They are already cooked.. just need to be warmed up a bit).
The parsley gets rid of the garlic breath. Make sure you drink the beer. Another goes really well with dinner.
