Beautiful juicy prime rib every time.
Ensure the roast is at room temperature. With a five pound roast, this will take at least 3-4 hours.
Mix the Herbe du Provence with the softened butter.
Carefully dry the roast with paper towel
Using your hands, spread the herb butter all over the roast
Add the coarse salt. Use a good quality salt such as Fleur de Sel.
Stand the roast up in the roast, rib side down.
Place the roast in a preheated 450F oven for 20 mins. Then turn the oven down to 325F and roast for approximately 12-14 mins/lb. To get this done correctly, use an oven safe meat thermometer and cook until the internal temperature is between 130 and 135 F.
When the roast has reached the correct temperature, remove from the oven, tent with foil for at least 15mins. The roast will continue to cook while it is resting.
While the roast is resting, make gravy or 'au jus' using the pan drippings
Use a good quality, calibrated, oven safe meat thermometer.
