Easy to make, good even for finicky eaters
Rinse and pat fish dry with paper towels. Cut into 4 or 5 pieces. Add butter to shallow baking dish and place in 350F oven to melt. Mix crumbs, cheese, salt and herbs. Spread mayonnaise on one side of fish; roll that side in crumb mix. Repeat on other side of fish. Remove baking dish from oven and arrange fish in single layer. Turn over to coat with melted butter. Sprinkle left over crumbs on top. Bake at 425F for 10 minutes per inch of thickness. Makes 4-5 servings.
