French apple tart with chestnut and hazelnut flour, Normandy cider and pommeau.
Place butter, sugar, salt, egg yolk and cider into an electric mixer and mix until smooth, then add the flours. Mix until a ball forms.
Wrap in cling film and let rest for several hours, preferably overnight.
Bring the pommeau to a boil, add honey and the dry fruit chopped into chunks. Remove from heat and add the toasted nuts.
Preheat oven to 170 C. Cut each apple into 8 fat slices and sauté in butter.
Roll out the dough and line a pie mould with it. Poke holes with a fork. Bake for 10 minutes empty. Remove from oven, spread the dry fruit mixture in the bottom and decorate the top with apples.
Place back into a preheated 170 C oven for 30 more minutes.
Once you develop a taste for the flours, you can roast them in a 100 c oven before using for a stronger flavour.
Serve with vanilla ice cream or creme anglaise and cinnamon.
