Ingredients

1 cup Steel-cut oats
4 tbs Unsalted butter
4 cups Water
3 cups Old-fashioned rolled oats
3/4 cup Brown sugar; light or dark
1 1/2 cups Apple; diced (one large)
1/2 cup Dried apricots; diced
1/4 cup Crystallized ginger; diced
1 teaspoon Salt
2 teaspoons Cinnamon
1/4 teaspoon Nutmeg
2 large Eggs
1/2 cup milk
1 teaspoon Vanilla

Original recipe makes 16

Servings  

Preparation

Preheat oven to 350.

Butter 9x13 baking dish.

Place steel-cut oats and butter in a large bowl.

Bring water to a boil and pour over oats.

Cover for 20 minutes.

Add remaining ingredients to the oat-and-butter mixture. Stir until well blended.

Transfer to the 9x13 baking dish.

Bake 35 - 40 minutes, until the center is set.

Remove and serve warm or cold.

Notes

Can also be served warm with whipped cream for dessert.
