Super easy crowd pleaser
Preheat oven 375. Combine cake mix, pudding mix, eggs, oil, water and sour cream. Blend until smooth. Set mixer on slow speed and mix in banana and nilla wafers until incorporated--dont overmix. Fill cupcake liners half way full. Bake 20-25. To test if done stick a toothpick in middle, if it comes out clean, its done
Whipped Cream Frosting
Combine the cream cheese, sugar, vanilla extract in a large bowl. Best if you use a blender/mixer to blend until smooth. While the mixture is still whipping, slowly pour in the heavy cream. Stop and scrape the bottom of the bowl a couple of times while you continue whipping until the cream can hold a stiff peak.
Let cupcakes cool and spread frosting with a knife, I usually use a piping gun its easier and faster. If you dont have one you can put the frosting in a ziploc and cut the end off just enough for the frosting to come out. Garnish by sprinkeling remaining crushed Nilla Wafers and stick a cookie on top for added fun.
