A mixed vegetable with barley casserole.
Preheat oven to 350 F, spray casserole with cooking spray.
Place barley and 1/4 cup vegetable broth in skillet - cook over medium heat 3 minutes or until lightly browned, stirring frequently. Transfer to prep'd casserole.
Add veggies, garlic powder, pepper and remaining 2 cups broth to casserole. Mix well. Cover and bake 50 minutes or until barley is tender and most of the liquid is absorbed. Stir several times during baking.
Stir in butter and salt. Let stand 5 minutes before serving.
