This gluten free recipe was created to be served with my hot red chili. I put a waffle on the plate, then pour the chili over the top. The sweet of the cornmeal waffle is a good contrast to the spicy chili. This was such a great hit at a local chili cookoff, that I was asked to serve this during a fall Church event. The Community LOVED it!
In a large bowl, combine flour, xanthum gum, cornmeal, baking powder,
sugar, and salt. Add milk, oil, and eggs. Stir until smooth.
Preheat a waffle iron to the manufacturers specifications. Lightly spray
the iron with cooking spray when heated. Pour the batter into the hot
iron. Cook in batches.
This can be served alone as a breakfast waffle. Top with sausage,
bacon, eggs, or with just plain butter and syrup.
For a different desert treat, top with ice cream, drizzle with chocolate
syrup, and add some nuts.
