Thick and hearty beef, bean and corn chili. Perfect for those cool fall days!
In saute pan cook ground beef, drain and set aside.
In large stock pot, cook diced peppers and onion for about 5 minutes. Add in some of the chili powder, stir and cook for 1 minute.
Poor in tomato juice and stir, making sure to scrape the bottom of the pot.
Add cooked ground beef, beans, tomatoes, corn and some more chili powder (be sure to taste before adding the entire amount of chili powder! Personal preferences may vary).
Bring contents to a rolling boil, reduce heat to simmer. Cook for one hour with lid on. Remove lid and simmer for an additional 30-45 minutes (or until desired thickness).
Top with: shredded cheese, crackers and sour cream!
