Use lamb or beef
Slice the steak thinly and dust with flour. Mix soy, wine, oyster sauce and stock with a pinch of sugar.Gently fry the onion until browned and tender. Set aside. In a hot wok, sear the beef. Add aromatics and toss. Add soy mix. Stir to coat the meat. Add onion back to pan. Serve.

NOTES : 1/2 tsp szechwan pepper can be added with the aromatics.Lamb could be substituted for the beef.
