Delicious braised pork loin braised in beer, molasses and stock with spices, onions, prunes, carrots, celery.
Preheat olive oil over medium high heat in a skillet. Pat pork loin dry and brown on all sides in the oil. Set aside.
Put beer, chicken stock, molasses, oregano, and salt in a covered casserole with the pork loin. Cover the casserole and put in a 350 degree oven for one half hour.
Grind the spices together.
After a half hour, add the onion, tomato and garlic to the broth, and sprinkle the ground spices over the loin and into the broth.
Cover and return to the oven for another 1/2 hour.
Add the prunes, carrots and celery.
Cover and return to the oven for another 1/2 hour or until the pork is done.
Serve over rice or polenta.
