Baked cheesecake, great flavor!
Crust Preparation:
Mix together graham cracker crumbs, 1/2 stick melted butter, 3 tbs sugar, 1/2 tsp cinnamon.
Grease bottom of 9" spring-sided pan cake pan and pat crust along bottom and up the side of the pan.
Chill the pan while preparing the filling.
Preheat oven to 350 degrees.
Filling Preparation:
Make sure 3 packages of cream cheese have been softened to room temperature.
On a very low speed, blend together cream cheese and, 1 1/4 cups of sugar until light and fluffy.
Separate the egg yolks from the whites.
One at a time, add the yolks only of the 6 eggs until thoroughly blended.
Stir in the sour cream, flour, vanilla, grated lemon rind and juice until smooth.
In a separate bowl, beat egg whites until they hold stiff peaks. Fold egg whites into mixture souffle-style, do NOT blend with mixer. This keeps the mixture light and airy.
Pour into prepared pan.
Bake at 350 degrees for 1 hour and 15 mins, or until top is golden brown; turn off oven heat and allow cake to cool in the oven for 1 hour.
Remove cake from the oven and allow to cool to room temperature.
Chill overnight before slicing to serve.
