This delicious twist on a pancake will satisfy your craving and fill you up for a much longer time.
Preheat oven to 450 degrees. Melt butter in a 10" oven-proof skillet over moderate heat. Add apple wedges to skillet and cook, turning over once until beginning to soften, about 3 to 5 minutes.
While apple is cooking, place milk, flour, eggs, sugar, vanilla and salt in blender or food processor and blend until smooth.
Pour batter over apple and transfer skillet to oven. Bake until pancake is puffed and golden, about 15 minutes. Dust with confectioners sugar and serve immediately.
daltermatt 1y agoThe great thing about this recipe is you haven't trashed the whole kitchen to make it. Cleanup is easy. I used whole whet flower, brown sugar and dusted with parmesan cheese.
raekess 1y agoVery tasty, slightly sweet batter. I added a little cinnamon and nutmeg and it really brought this pancake to life! I'd suggest putting this on a lower rack as the pancake crept up the sides of the dish and burned at the tops. Easy fed a family of four with sides of bacon and eggs.
