Easy, healthy, cheap, delicious. (adapted from a SparkPeople recipe)
Saute the onion and zucchini until tender. Add all other ingredients and heat through. Serve with plain non-fat yogurt. May add any vegetables you like such as butternut squash, sweet potato, bell peppers, etc.
The basic recipe calls for just the canned ingredients. As long as you use all of those you can't really mess this up.
