Brown Rice, Black Beans, Diced Tomatoes and Red & Yellow Bell Peppers
In a large saucepan sauté peppers and onion in oil until tender. Stir in beans, tomatoes, apple cider vinegar, garlic salt, pepper and cayenne pepper. Bring to a boil. Reduce heat and simmer for uncovered for 15 minutes or until desired consistency, stirring occasionally. Bring 4 cups of water to a boil, add 2 tablespoons of Extra Virgin Olive Oil. Stir in 2 cups of organic brown rice. Reduce heat and cover for 35 to 40 minutes or until water is absorbed by the rice. Combine rice and beans and enjoy.
