Easy, quick fish with vibrant flavours of the Mediterranean
1. Heat 1 tablespoon oil to a high heat in frying pan
2. Place fish in frying pan for 1min each side just to brown, season with salt then set aside
3. Turn heat down to medium and add remaining oil, garlic, onion and capsicum, cook for 5 min
4. Add rest of the ingredients (only half of the lemon juice), cook for a further 5min
5. Return fish to pan and cook until flakey
6. Remove from heat, add remaining lemon juice
Serve with fresh vegetables or rice
