Baked Butternut Squash

3 lbs Butternut squash; Boiled & mashed
1/4 cup Onions; Diced
1 cup Soda or Ritz crackers; crushed
To taste Salt & pepper
2 Eggs; Beaten
1/2 cup Melted Butter
1 tbsp Sugar

Original recipe makes 1 Servings



Preheat oven to 375 degrees.

Boil Butternut Squash & mash until smooth.

Add onion, half the crackers, salt & pepper, eggs and half the butter to the squash.

Mix together until smooth.

Place mixture in 4 quart baking pan.

Mix remaining butter with remaining cracker crumbs and place on top.

Bake for 1 hour.
