Suggest a better descriptionTrim fat from pork; cut pork into 1-inch cubes. Lightly coat an unheated large skillet with nonstick cooking spray. Preheat over medium heat. Cook meat; half at a time, in hot skillet until browned. Drain off fat.
In a 3 1/2- or 4-quart slow cooker combine meat and bell peppers. Sprinkle with Cajun seasoning. Top with undrained tomatoes. Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 2 1/2 hours.
3. If using low-heat setting, turn to high-heat setting. Stir in frozen 'okra. Cover and cook for 30 minutes more. Serve over hot cooked brown rice. If desired, pass hot pepper sauce.
