Delicious upscale variation on peanut brittle
In a 2-quart saucepan combine sugar, butter and corn syrup. Cook over
medium heat, stirring occasionally with a WOODEN SPOON, until candy
thermometer reaches 290 degrees or a small amount of mixture dripped into
ice water forms brittle strands (25 to 30 minutes).
Remove from heat; stir in cashews and IMMEDIATELY spread onto a
waxed-paper-lined cookie sheet.
Cool complete; break into pieces
