Traditional Peruvian main course. Chicken, mashed potatoes, eggs, avocado and olives. This strange seeming combination of ingredients is delicious!
Boil the potatoes in salted water. Once cool, peel them and mash them with lime juice, aji amarillo, salt and pepper. Set aside.
In the meanwhile, boil the chicken in salted water. Shred it by hand or in a processor. Mix it with mayonnaise to taste. Set aside.
In the meanwhile, cover the 3 eggs in ~1 inch of water. Bring to a boil. Remove from heat, cover and let stand for 10 minutes. Remove eggs with slotted spoon from water and submerge them in iced water for 5 minutes. Peel and chop them and set them aside.
Place 1/3 of mashed potatoes as the first layer in a large rectangular casserole dish. Follow with 1/2 of the chicken mixture, another layer of potatoes, a layer of 1/2 of the avocadoes, eggs, and olives. Cover with the second half of the chicken mixture. Place the third and final portion of the mashed potatoes, and decorate the top with the remaining avocado, olives and egg.
