Eating breakfast on the run sounds inherently unhealthy, but it doesn’t have to be. These granola bars, the perfect grab-and-go morning meal, are packed with protein, fiber, and omega-3s—though they taste as decadent as a donut. If you like, you can make them gluten-free by swapping flours. Just remember to use gluten-free oats, too.
Preheat the oven to 350°F. Grease a nonstick (PFOA-free) 9 by 13-inch baking pan with 2 teaspoons of the coconut oil. Set aside.
In a large bowl, stir together the oats, flour, sugar, chia, cinnamon, nuts, white chocolate chips, and salt.
In another bowl, stir together the honey, nut butter, and the remaining ? cup of coconut oil. Add the eggs and vanilla and almond extracts and vigorously stir with a fork.
Add the honey mixture to the oat mixture and stir with a silicone spoon or spatula until evenly combined. Transfer to the prepared baking pan, pressing down on the mixture to fill the pan evenly and compactly. Bake until edges begin to brown, about 30 minutes.
Let stand for 10 minutes to cool slightly, then cut into 15 bars in the pan. Place pan on a wire rack and cool completely. Remove the bars from the pan and serve. Store individually wrapped in unbleached parchment paper, then aluminum foil, at room temperature for up to 3 days, or freeze for up to 3 months.
