Suggest a better descriptionCook the noodles (boil for 8 minutes) & drain, set aside
Mix in a small bowl the fish sauce, & brown sugar
Heat oil in a baking pot until hot. Add shallots, garlic, pepper flakes & stir fry for a few minutes, add in pork if using and cook until fully cooked
Add carrot, curry paste, fish sauce/brown sugar mixture & cook for 30 seconds before stirring in the cellophane noodles & green onions
Serve with fresh chopped cilantro
