Suggest a better description1. Preheat the oven to 200C/400F/gas mark 6.
2. First make the pancakes. Pour the melted butter into a mixing bowl, stir in the egg then the flour and the salt. Gradually whisk in the milk until the batter is completely smooth. Leave the batter the rest for 30 mins before using.
3. Heat about 1 tsp of oil in an 18cm frying pan and pour in a little of the batter. Tilt the pan so that the batter covers the base in a thin layer. Cook over a high heat for 1-2 mins until golden underneath. Turn the pancake over using a palette knife and cook the other side for a further 1 min until lightly browned. Tip out onto a plate and continue like this layering the pancakes, until you have made eight.
4. Now make the sauce. Melt 25g of the butter in a pan. Stir in the flour and cook over a low heat for 1-2 mins. Remove from the heat and gradually add the milk, stirring constantly until smooth. Return to the heat, add the nutmeg and s&p and cook, stirring occasionally for 5 mins.
5. Season the diced chicken. Melt the remaining butter in a large frying pan and add the chicken. Cook over a moderate heat for 4-5 mins then stir in the ham and spinach and cook for 5 mins. Add the mixture to the sauce and stir well. Divide the mixture between the 8 pancakes, roll the up and place into a well buttered oven dish.
6. Finally make the topping,. Mix the cream and egg yolk together and pour over the pancakes. Sprinkle over the cheese and cook in the oven for 15-20 mins until the cheese is bubbling and golden brown.
