Arrange everything ahead: the bread crumbs & parmesan cheese in one dish, the egg mixture in another. Zest of limes in one small bowl, the juice of the limes in another. Set the butter in another small dish to soften and have the herbs ready....then.....
1. Coat chicken breasts with egg, and dip in bread crumbs and cheese mixture. Set aside and allow to dry for 5 - 10 minutes.
2. Heat olive oil in a large skillet over medium heat. check with a few pieces of bread crumbs for heat.
3 Place breaded chicken into the skillet, and fry for 2 to 4 minutes on each side. Remove to paper toweling.
4. Drain grease from the skillet, add sliced mushrooms & saute, add lime juice & zest. Add butter, and stir until melted. Season with chives and dill. Spoon sauce over chicken, add vegetable and serve immediately.
