Delicate yet succulent, the base of this Divan is a homemade chicken soup, perfectly complimented by broccoli, noodles, cheese and wine for that "warm feeling all over". This dish was originally named for the Divan Parisien Restaurant in the New York Chatham Hotel. Though more earthy, this version still summons a continental elegance.
1. Fill large pot half full of water. Add teaspoon of salt, 1/2 teaspoon ground coriander. Bring to boil.
2. Add carrots, onion, chicken. Return to boil, reduce heat to medium, cook 10 minutes.
3. Drain all contents of pot in colander, put in food processor.
4. Don't rinse pot, fill again half full of water, heat to boiling.
5. Add noodles and broccoli, return to boil. Follow noodle instructions, but five minutes should be fine. Drain in colander.
6. Coat the inside of a 13x9" baking dish with cooking spray or grease with butter.
7. Add broccoli and noodles to baking dish, evenly distribute.
8. Rough process carrots, onion, chicken in processor. Spread atop broccoli and noodles in baking dish.
9. To the now large empty pot add soup, wine, cheese, curry powder, lemon juice over medium heat. Stir till smooth, don't boil.
10. Spread soup mixture evenly atop chicken mixture in baking dish.
11. Add the butter to small saucepan. When melted, add panko crumbs, combine till all crumbs saturated.
12. Sprinkle panko crumbs over top of baking dish contents evenly. They will not cover entire surface, should be sparse.
13. Bake in 350 degree oven for 30 minutes. Blast in broiler for 1 minute or as required, to slightly brown crumbs.
14. Let stand for a few minutes before serving. This is not a cheese and milk casserole, so will tumble a bit during first serving. This is part of the beauty of the dish.
