This recipe cooks in a flash with the use of naturally thin sliced pork cutlets.
1.) If pork cutlets are large, cut into 6 serving pieces. Beat water and egg with wire whisk or hand beater. Mix cracker crumbs and pepper together. Dip pork into egg mixture, then coat with cracker crumbs.
2.) Heat oil in 12-inch skillet over medium-high heat. Cook pork in oil 3 to 4 minutes, turning once, until brown on outside and slightly pink in center. Remove pork from skillet; keep warm.
Prepare Milk Gravy:
1.) Measure pork drippings; add enough oil to drippings, if necessar, to measure 1/4 cup. Return drippings to skillet. Stir in flour and salt. Cook over low heat, stirring constantly to loosen brown particles from skillet, until smooth and bgubbly; remove from heat. Slowly pour milk into skillet, stirring constantly. Heat to boiling over low heat, stirring constantly. Boil and stir 1 minute.
2.) Serve with Chicken-Fried Pork.
