1. Cook rice according tro package directions; keep warm.
2. Saute seasoned chicken in oil in a large saute pan over medium-high heatuntil browned on both sides, about4 minutes. Add onion, bell pepper,garlic, and pepper flakes. Cover and cook until onion is translucent, about3 minutes.
3. Stir in tomatoes and coconut milk; cover and cook until tomatoes begin tobreak down, 5-6 minutes. Add scallions, cilantro, and lime juice; cover 2-3minutes. Season with salt. Spoon rice onto 2 serving plates, then dividechicken and sauce between them.
4. Garnish with cilantro and lime.
