Clean and light meal.
Prep all ingredients. Soak bamboo kabob skewers in water for 10 minutes. In a bowl, place all other ingredients except vegetables and chicken and mix well. Add chicken chunks and marinate for 1 hour in refrigerator. Skewer chicken and vegetables. Grill inside or outside until just done.
Cover and let set for 5 minutes before serving. Serve with broiled tomato or saute of greens.
Longer you marinate the better.
