Easy & Delicious
Dredge chicken in flour, paprika and s&p. Heat butter and olive oil in large skillet over medium heat. Add chicken, but do not crowd pan, and saute about 2 minutes per side. Remove and keep warm.
Add lemon juice and white wine to pan and deglaze with wooden spoon. Bring to a simmer, reduce heat to low and allow the sauce to thicken. When sauce is thick, swirl in butter and capers. Return chicken to skillet and spoon sauce over the pieces. Serve immediately.
It is important that the chicken slices be thin, which many markets have available.
