in a medium bowl, mix together the tomatoes, red onion, jalapeno, lime juice, cilantro, and cumin.
cover and refrigerate for up to 24 hours (1 hour minimum).
to make the quesadillas:
preheat the oven to 350F.
lay a sheet of parchment paper or foil on a baking sheet.
in a medium skillet over medium-high heat, heat tortillas one at a time until they brown slightly, about a minute per side. place the tortillas on a baking sheet, spacing evenly.
distribute chicken onto tortillas, covering half.
scatter cheese over the chicken, then add hot sauce.
fold tortillas and press down lightly.
bake until cheese is melted and tortilla is golden brown, about 8-10 minutes.
transfer tortillas to a cutting board and cut each into 4 wedges.
serve each quesadilla with a 1/2 cup pico de gallo on the side.
