adapted from: Quesadillas, Homestyle Cooking: Made Healthy p. 160, by Jeanne Jones
1. Preheat the oven to 300 degrees.
2. In a bowl, mix the cooked chicken with cumin and salt. Set aside.
3. Wrap the tortillas in foil. Bake for about 15 minutes, until they are pliable. Warm a large skillet on the stove-top with medium heat.
4. In our house everyone likes their quesadilla made differently. So place the following ingredients in different prep cups: shredded cheese, diced green chile peppers, chopped onions and chicken mixture.
5. Lay one tortilla on a plate. On one half of the tortilla, add ingredients as desired including 1/4 cup of the shredded cheese. Fold the tortilla in half.
6. Add a little butter to the skillet. Brown one half of the tortilla and then the other. Remove and plate. Use a pizza cutter to cut in thirds or fourths. Top with sour cream. Enjoy!
I like to a few drops of a chipotle hot sauce with my quesadilla prior to frying. You can bake them for a healthier option.
