Hearty greens and beans make this stew great.
- Cook bacon in a large sauce pan over medium heat until crisp.
- Remove bacon using slotted spoon and set aside, leaving bacon grease in the pan.
- Add carrot and onion to the drippings in the pan, cooking for 4 minutes or util softened, stirring occasionally.
- Add paprika, salt, cumin, and red pepper flakes. Cook for 30 seconds, stirring constantly.
- Add chicken broth, water, and chick peas.
- Bring to a boil, then reduce heat to a simmer. Simmer for 20 minutes, stirring occasionally.
- Add kale to bean mixture. Cover and simmer for 10 minutes, or until kale is tender, stirring occasionally.
- Serve, sprinkled with bacon on top.
Omit the bacon for a vegetarian alternative.
