# Season pork on all sides with Trinidad seasoning, pepper, and cumin.
# Roughly dice the chipolte peppers.
# Mix chipolte peppers, chipolte sauce, and apricot jam in bowl.
# Spoon the chipolte and jam mixture over the pork, turning to coat.
# Roughly dice the jalapenos, habaneros, and onion.
# Place pork in slow cooker. Scatter the jalapenos, habaneros, and onion around the pork.
# Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, and shred meat with a fork.
# Place pulled pork in slow cooker. Mix well. Cover, and cook on Low for 1 hour
# Serve with the cilantro and lime.
