Great appetizers
To prepare the quesadillas, place 4 tortillas on a work surface and spread with the cheese, chipotle, chorizo, cilantro, and scallions. Top each with another tortilla. Heat a large, nonstick pan over meduim-low heat. Spray with cooking spray. Place one quesadilla in the pan and cook for 2-3 minutes. When cheese begins to melt, gently turn quesadilla over with a large spatula and cook for another 2-3 minutes. Keep warm in the oven while you repeat the process with the remaining quesadillas. Cut each one into 4 pieces and serve.
