Most amazing chocolate silk pie ever! Very difficult to make and time consuming. From Missy & Brian.
CRUST
1) Cut butter into 1/4" cubes and freeze.
2) Combine dry ingredients in food processor and blend till combined.
3) Add butter cubes to dry ingredients in the food processor and pulse to combine until mixture resembles coarse crumbs.
4) Add egg yolk and water and process until mixture comes together.
5) Press mixture together to form a 1" round disc & put in freezer to chill.
6) Bake at 350 degrees for 10 minutes.
FILLING
1) In a double boiler beat egg yolks, sugar, vanilla, salt & brandy for 5 minutes, stirring continuously.
2) Pour egg mixture into another container to cool to room temperature.
3) Clean double boiler mixing bowl.
4) Melt the 1 ounce of unsweetened chocolate and the 4 ounces of semi-sweet chocolate in double boiler.
5) Once chocolate is melted remove from heat and whisk in the chopped butter 1 tablespoon at at time till melted.
6) Gradually beat in the egg mixture until smooth.
7) Stir in coffee and set mixture aside.
8) Place egg whites and cream of tarter in bowl and beat until soft peaks form.
9) Add confectioners sugar and beat till stiff.
10) Fold egg white mixture into the chocolate mixture.
11) In a large bowl beat heavy cream until stiff.
12) Fold chocolate mixture into heavy cream mixture along with 1 ounce of chopped semi-sweet chocolate.
13) Pour completed mixture into pie crust and chill in fridge at least 3 hrs or up to 3 days.
TOPPING
14) When ready to serve whip heavy cream, confectioners sugar and vanilla together.
15) Place topping on top of chilled pie in desired manner.
