Put almonds in a large bowl, add olive oil, and stir well.
Sprinkle in cinnamon and salt and toss to coat.
Spread almonds evenly on baking sheet.
Bake 1 hour, stirring occasionally.
Cool and serve, or store in an airtight container.
Chop almonds and serve with oatmeal.
