This classic Mornay sauce is the perfect addition to any savory crepe. Personally pouring it over a savory crepe with thinly sliced ham, spinach, tomatoes and Gruyere cheese it the classic and best way to enjoy it. But you can easily add it to steamed vegetables, eggs, pasta, fish or steak.
- Let milk sit out to reach room temperature
- Melt butter in sauce pan over medium-low heat
- Sprinkle flour over butter and cook for 2 min. stirring occasionally. Do not let brown.
- Gradually add milk to flour mixture, stirring with a whisk until smooth, bring to a simmer. Let this simmer for about 10 min until thickened, stirring frequently. If lumps still remain, strain through a fine sieve to remove them.
- Stir in salt, pepper and nutmeg to taste
- Add shredded Gruyere cheese stirring until smooth
- For presentation, sprinkle the diced green onions over the finished product after serving
Serve!
The end product should be a smooth silky product ready to pour over your main dish.
