Christmas spirit in a glass - dangerously drinkable
Ravinder Bhogal, Waitrose magazine December 2011
Stud clementines with cloves then cut each into half.
Put in a roasting tin, scatter with cinammon bits and spoon over vermouth.
Leave to soak for at least 1 hour or overnight.
Preheat the oven to 200C.
Roast the clementines for 20 minutes until lightly scorched in places and caramelised.
Allow to cool, then squeeze the juice into a jug, adding any liquid from the roasting tin.
Sieve and chill.
Mix the clementine juice, campari, gin, lemon juice, and agave nectar. Pour into 4 glases and top with the sparkling wine.
