Gluten free version, a coconut milk-based flat bread.
Combine all the ingredients to make the dough, slowly adding the coconut milk to the dry ingredients, just enough to make a dough that will not stick to your fingers.
Form the dough into balls big enough to roll out into 6-8 inch flat bread. Roll each ball out, using extra flour to keep from sticking.
Cook on a non stick pan at medium heat on each side, long enough to brown the bread. Bubbles will form, they can be poked with a fork to help cook evenly.
