If you love cookies and cream, or even if you don't but enjoy Oreo cookies, this is a great choice! & it sure beats that Jello Cheesecake you buy at the store! It is deliciously rich & creamy, definitely one of the best cheesecakes I've ever had!
• Heat oven to 325°F
Crust...
• Mix finely crushes crumbs and butter; press into the bottom of a 9-inch springform pan. Bake 10 min. Set aside to cool.
Filling...
• Beat cream cheese, sugar, flour and vanilla at medium speed with electric mixer until well blended. Add eggs, one at a time, mixing at low speed after each addition, just until blended.
• Fold in chopped cookies pour over crust.
• Bake 1 hour and 5 minutes or until center is almost fat. Run knife or metal spatula around the rim of pan to loosen cake; cool cake before removing rim of pan. Refrigerate 4 hours or overnight. Garnish with whipped topping, Oreos cut in half and mint leaves.
* I scrape off all the cream from Oreos, but some may prefer to keep it on for the Oreos in the cake &/or garnishing.
To garnish, I stick half-sized Oreos into cake along the outer edge, allowing others to add whipped cream if they want. When I do add whip cream, I put it along the outer edge and then place cookies.
