Make-ahead breakfast
Fry potatoes and onions in butter until golden brown. Place in greased 8 or 9 inch glass baking dish. Top with cheese. Crumble sausage and spread over cheese. Top with mushrooms.
Combine eggs and milk. Season with salt and pepper. Pour over sausage.
Bake at 350 F for 30-35 minutes.
If making ahead, do not add egg until ready to bake.
