These are yummy. If made ahead, do NOT coat them in flour until ready to fry. Doing so will make them mushy.
Preheat oven to 350.
Combine all ingredients except flour for coating. Gently break up crab and mix by hand. Form into cakes. If making ahead, stop at this point.
Lightly dip cakes in flour to coat - just enough to hold them together.
Put 1 drop oil in pan, heat, and then lightly sear crab cakes on each side.
Bake for 2 minutes.
